Cookbooks: The No Salt Cookbook by Emily GeorgeWhen Emily George was diagnosed with Meniere’s disease (which affects balance and hearing) in 2011, doctors advised her she would have to cut salt from her diet.

“Life was thrown into disarray for a while in 2011 while I was pregnant with my third child – I was diagnosed with Meniere’s disease – a condition of the inner ear, disturbing balance and hearing,” said Emily. “By the time I was diagnosed I was suffering daily vertigo attacks, had lost most of the hearing in one ear, and had constant tinnitus. Although currently incurable, Meniere’s can be managed. For a lot of people, including me, a low sodium diet helps.”

While it’s virtually impossible to cut all salt from the diet, in her research, Emily did discover there are a lot of low sodium recipes out there.

“Having always loved cooking I was forever on the lookout for new meals to create, and I started to realise that there was a distinct lack of good, flavoursome, salt free recipes available – or the ones that were salt free, still used high sodium ingredients. So I began to create my own, and this book emerged.”

Based on the known benefits of the Mediterranean style of cooking, Emily will introduce you too a whole new world of flavour with her collection of low sodium dishes.

“During the process, I have really enjoyed creating new dishes and discovering new flavours. Using ingredients that I previously didn’t even know existed, or just didn’t know what to do with,” said Emily.

“As a busy mum, I have tried to include a combination of some easy to prepare mid week meals, as well as dishes I proudly serve when entertaining. Now when I host friends for dinner and I tell them there is no salt in the meal, they just can’t believe it.”
