Page 10: Spicy Fruit Salad

Serves 6-8
Go extra light with this special fruit salad. Sweet seasonal fruit infused with the flavours of the orient: spicy chilli, fresh ginger, tangy lime and a little salt.
Spicy Fruit Salad

Ingredients
3 mangoes, peeled and sliced
1 small pineapple, peeled and sliced/cubed
10 lychees, peeled, seeded and halved
2 red chillies, finely chopped
1 tsp ginger, grated
2 tsp caster sugar
Juice of 2 limes
Zest of 1 lime
2 tsp fish sauce
4 tsp fresh mint, finely sliced

Method
Mix all ingredients in a bowl, cover and pop in the fridge for at least an hour to infuse the flavours.  Serve as a light dessert or chop fruit really finely and serve as a salsa with your next bbq.

Why it’s good for you
Don’t make me spell it out! It’s gorgeous fruit with added zest and zing.  There’s no going back to boring fruit salad now.
