Page 5: Baked Bananas with Maple Syrup
Serves 4
Warm bananas baked in maple syrup and served with a little ice-cream. Comfort food on a plate.
Ingredients
4 small bananas
2/3 cup maple syrup
1 1/3 cups low fat ice-cream
Method
Heat oven to 180°c. Leave bananas in their skins and cut lengthways. Place on a largish piece of foil, flesh side up. Pour over maple syrup making sure each banana is coated. Seal foil so bananas are completely enclosed, place on a baking tray and bake for 5-7 minutes in oven until softened. Serve with ice-cream, drizzled with baking juices.
Why it’s good for you
Baked bananas are usually done in a caramel sauce which is absolute heaven but high in fat and sugar. A little maple syrup and a dollop of ice-cream is all you need for a gorgeous low fat banana dessert.
